Tofu Bhurji Kati Roll

Shila Wattamwar consistently looks at ways to pursue her journey towards wellness and balance.  Much of this is reflected through her approach of "Balancing my life with Layers" article, as well as her "Indulgence in Simplicity" cooking style.  She believes that feeling healthy, strong, and supported at the core, provides the strength needed to balance the aspects of life effectively.  

INGREDIENTS

  • 1 pack of firm tofu

  • 1/2 onion

  • 1-2 gloves garlic

  • 1-inch ginger

  • 1/2 tomato

  • 1/2 lemon

  • 1 Jalapeno de-seeded

  • Pinch of Indian spices: Cumin, Coriander, Turmeric, Chili Powder & Tandoori powder

  • 1/2 Cup shredded cheese

  • 1/2 Cup of cilantro basil chutney (see recipe in sauce section)

  • 4-6 rotis or wraps

INSTRUCTIONS

  1. Rinse the block of tofu and let the water drain on a tissue

  2. Chop onions, garlic, ginger & Jalapenos very finely

  3. Chop tomatoes roughly

  4. Cut tofu into small blocks

  5. Heat oil on a pan

  6. Once heated, add onions, garlic & ginger and let stir fry for about 2 min  

  7. Add Indian spices and continue to stir fry for 2 min

  8. Add tofu to pan

  9. Take masher and mash tofu into crumbles in pan (its okay if other things get mashed a bit too)

  10. Add tomatoes & jalapenos and continue to stir fry for 5min

  11. Add lemon juice and salt & pepper to taste

  12. Lay out roti or wrap

  13. Fill roti/wrap with 2-3 spoons of tofu mix, green chutney & shredded cheese

  14. Roll roti and place on a separate oiled pan for 2-3 min on each side

  15. Serve warm
